It is FINALLY here!
It's spring! It's spring and I have been in the mood to create fun spring items whether I craft or make them. The other day while I was deciding what to make as a dessert to take to my momma's house, the idea came to me for these spring birds nest cupcakes!

I WILL admit that this idea is NOT mine but one I saw on the back of a package of an edible Easter grass I picked up and knew it would be fun to make with my daughter and my momma! We had a blast making them together and I loved that it was something simple that we all enjoyed doing!
I just baked my favorite cupcakes and then transported them over to my mom's for all of us to work on after dinner. I happened to use a funfetti cake mix for these cupcakes and just a vanilla pre-made frosting.
It was simple, quick and oh so good!
Spring Birds Nest Cupcakes
~Ingredients ~
- 1 box of cake mix (your choice)
- 1 container of frosting (your choice)
- a bag of mini Robin Eggs
- 1 bag of edible Easter grass
Instructions
- Prepare and bake the cupcakes following the directions on the box.
- Choose a frosting and go ahead and frost all of the cupcakes after they have completely cooled.
- Using the edible Easter grass, break into small pieces, as it comes as long pieces in the package, and strategically place in a circle formation around the top of the cupcake until it starts to look like a birds nest. My edible grass pieces I used were about 1-2 inches long.
- Simply place three of the robins eggs in the middle to create the look of 'birds eggs' and you are done!
I told you these were easy. It was a fun little baking project to do with the girls and we had so much fun laughing at my mom eating all of the grass to my daughter using all of the blue robins eggs on her cupcakes! Silly girls! ;)
These cupcakes are great at Easter, spring or even would be really cute at a baby or wedding shower! It was a perfect 'food craft' to do with kids as well, which are my favorite!
