RECIPE :: mini Minions Donuts

Do you know what is happening this week? Well if you are like me and have any kids in your home, then you probably already know what I am going to say because the kids as well as adults, are patiently waiting for this movie to be released! I will give you a hint . . . it's one of the BEST animated movies we have ever seen. It features the most adorable little yellow, goggle-wearing, banana-loving guys ever! I am sure by now you have guessed it . . . it's Minions © 2015 Universal Studios. All rights reserved. We can not wait and in case you didn't know, it is coming to Blu-Ray/DVD on December 8th, so pre-order it today because that IS the way to go since it's sooooo easy plus you can get some limited exclusive goodies, when you pre-order. Get in on the fun for your family movie night, so mark your calendars and get ready! ;)

I mean c'mon who doesn't like those hilarious, lovable little dudes, so to celebrate the release of Illumination Entertainment's Minions movie, I decided to come up with a fun and tasty treat featuring bananas in the recipe since that IS their favorite food! ;) That's right I made mini baked minions banana donuts! Oh my yum!

This recipe is perfect to make with your kids! My daughter and I love the minions, we love bananas, we love donuts, we love baking together so we had a blast making these and we will show you how right now! Here's the recipe for: baked minions mini donuts

1. Gather all of the ingredients you will need:

  • 2 cups AP flour - sifted
  • 3/4 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs (lightly beaten)
  • 2 large ripe bananas
  • 1/2 cup of milk
  • 1 tsp. vanilla extract
  • 2 tbsp. melted unsalted butter

2. Preheat oven to 425 degrees and spray donut pans with non-stick baking spray.


3. In a medium sized bowl, sift together flour, sugar, baking powder and salt. Add in bananas, eggs, vanilla extract and butter and beat until combined.

 
4. Place batter into piping bag and fill donut pans, fill about 1/2 way.


5. Bake for 5-7 minutes or until the donut springs back when touched.

6. Cool completely.

To make the donuts look like the minions, follow these instructions:

1. Grab a few items for the look- you will need:
  • white icing (pre-made or make your own)
  • yellow food coloring
  • candy eyes
  • black writing icing tube
2. Set aside about 1/4 cup of the white icing to save for the eyes. The remainder of the white icing add the food coloring to it.  Add at least 10-15 drops (maybe more) of yellow food coloring to the white icing until you get the desired yellow color for the minions. Mix well together.

3. Ice the donuts as smoothly as you can to get them ready for the eyes and their goggles. Let the icing 'set' for about 30 minutes if you like, I think it makes the next step much easier.

4. We created two different minion faces, the minion with one eye and another with two. For the minion face that has one eye, put a small amount of the white icing right in the middle. For the minion with two eyes you can add two small spots with white icing before putting the candy eyes on or put the eyes on and then add the white icing around it. We tried both ways and I don't think one was better than another so I mention that so you can choose for yourself and not worry about it being perfect. ;)

5. Using the black gel writer icing tube, carefully 'ice' around the white icing to create the outline of their goggles and then also draw the straps off to the side.  You can use this black icing to create the black of the eyes or use the candy eyes - we did both to see if we had a preference and again, both worked great. It's all about options right? ;) To finish them, draw a small smile and add a couple strands of hair towards the top and you are done!

You are now all set to serve them up on a plate and enjoy! If you are wanting to display them for a little viewing party like we are doing, simply take some paper straws, cut them in half and push the mini donuts onto them for an instant minions donut pop! SO much fun, it's the perfect treat and easy to grab as we are watching the Minions movie and laughing hysterically! I can not wait, I mean, WE can not wait!!!! ;)

  14. BANANAS. These look so good. My daughter wasnt really into Minions, she never liked Despicable Me but when the movie came out and they were everywhere, she started laughing at them. I think we are going to rent it this weekend.
