I love this season, when everyone is preparing for the holidays and planning all kinds of fun things to do with family and friends. One thing I really like to focus on this time of year is my family traditions and sharing experiences with my family to honor those things we hold dear to our hearts or a special memory of someone who is no longer around. My grandmother used to make this cake every chance she got and it wasn't too much chocolate but it was enough to make you crave it. It was made from Coca-Cola and man was it good. She would make it every year for the holidays and we would look forward to having it when we knew she was baking one up. So this year, when I attend my family's annual Christmas party with all of my cousins, aunts and uncles, I am bringing my grandmother with me. Well not technically, oh how I wish I could, as I miss her so, but I will take her cake and share it with my family so we can all remember Gaga. (her nickname)
I can't wait to see everyone's reaction as I told them what I was making was a surprise. I loved making it this year and sharing with my own daughter how much Gaga meant to me and how she would always make me this cake. I'd like to think I was her favorite since she was mine. ;) I believe there is something so magical about making a favorite recipe that means so much to so many. It just brings everyone a little slice of joy, even if for just that time it takes to eat that slice of cake.
This recipe is pretty easy to make and one of the nice things about it is you do NOT have to wait for it to cool before frosting because you need to frost it hot! Win-win on time spent making this creation! lol Like I said before, I am taking it to our family party as it's the perfect addition to any get together!
Here's how to make your own Coca-Cola CAKE!
Ingredients you will need: 24 Pack Coke de Mexico Coca-Cola, 2 cups of unsifted flour, 2 cups of sugar, 2 sticks of margarine, 3 tbsp. cocoa, 1 cup of Coca-Cola, 1/2 cup of buttermilk, 2 beaten eggs, 1 tsp. baking soda, 1 tsp. vanilla and 2 cups of mini marshmallows
Step 1: combine flour, baking soda and sugar in mixing bowl.
Step 2: heat butter, cocoa and Coca-Cola to boiling and pour over flour, sugar mixture. Mix thoroughly.
Step 3: add buttermilk, eggs, vanilla and marshmallows - beaten together and mix well. This will be a thin batter with the marshmallows floating on top.
Step 4: bake in flat 9x12 inch greased pan for 45-50 minutes at 350 degrees. Frost while hot.
Step 5: to make the icing: combine 1/2 cup butter, 2 tbsp. of cocoa and 6 tbsp. of Coca-Cola and heat to boiling. Add 1 box (16 oz.) of powdered sugar, then 1 cup of chopped pecans. Spread over hot cake.
Doesn't that look amazing! It is delish and you will love it if you like a cake that's not too heavy or real chocolate-y. I grabbed everything I needed to make this Coca-Cola cake, on my latest trip to Sam's Club. I just loved these 24 packs of glass Coca-Cola bottles and I knew I could use them for our craft and then also for the recipe. The Coke de Mexico Coca-Cola in glass bottles is made with real sugar so no worries about all of that high fructose corn syrup. YAY! While there, I also noticed that they had 4-packs of 2-liter Coke and Diet Coke, at a special price of $3.98 so I grabbed a Diet Coke to take to the party, along with my cake I made!
I also have a surprise for YOU! I designed some recipe cards for you! Make sure to download your FREE plaid holiday recipe cards so you can share the recipe with your friends and family and maybe you too, can start a yearly tradition of making this delicious cake!
Now let's get our craft on and whip up some of these adorable Coca-Cola bottle SNOWMEN! Sharing the joy of the season has never been cuter with these snowman bottles we are gifting to teachers, friends and family! I love how these guys (and girls) turned out and can't wait to see what everyone thinks of them! I think anyone that receives one is going to LOVE it! ;)
Step 1: gather your supplies: you will need Coke de Mexico Coca-Cola bottles, white and orange felt, googly eyes, fabric, cupcake liners, tape, glue, scissors, white craft paint, paintbrush, red marker
Step 2: paint the Coca Cola bottles with white paint and allow to dry
Step 3: cut out about 1.5 inch round circles to use for the snowmen faces and cut out noses using the orange felt. Glue nose and googly eyes onto face. Add rosey cheeks using the red marker for the snow women. Glue entire snowman head onto bottles.
Step 4: cut out the cupcake liners to create the skirt for the snow women and tape in the back. I did two layers for the skirts to make it a little more girly. I even tried just putting the 'skirts' on with the bottles not painted and still looks so cute right? ;)
Step 5: cut strips of fabric to use for the snowmen scarves and tie around neck of bottle.
So how much fun are these snowman bottles? I think they make the perfect gift by themselves or even added in with something else, as they are so very festive and super adorable!
