Easy Spring Dessert
Looking for something sweet to serve for
Mother's Day? This recipe is easy and only requires 3 ingredients! You can even
do it with all store-bought items to make for a quick and easy dessert for
brunch, lunch, or dinner.
I love a parfait so when I had these
perfect strawberries to serve, I thought a little cookie berry parfait would be
a delightful dessert. Stack as many layers as you like and use your favorite
cookies. It is so easy, the kids can make this and feel proud to serve something
yummy on a special day.
Spring Berry Parfait
~makes 4 and takes less than 5 minutes to
assemble~
Ingredients:
- 12 cookies (I used round
shortbread but vanilla wafers or gingersnaps would also work well)
- 1 to 2 cups of berries (depending
on size of glass or bowl)

Whipped cream
How to:
- Use 4 glasses or bowls and
place a cookie in the bottom
- Top with a dollop of whipped
cream and a scoop of berries
- Place another cookie on top and
repeat with berries and cream
- Top with a cookie and serve
with a fork or spoon
Serve immediately and enjoy!
